Homemade Baked Bibingka

Bibingka is a traditional Filipino rice cake often served with shaved coconut, sugar, and salted duck egg as toppings.

Tips for making Bibingka
Do not skip the preheating step. Your oven needs to be hot once your bibingka goes in.
Use banana leaves. It is a must in making bibingka. It gives the rice cake a touch of earthy aroma.
Find the right baking pan or dish. Use a round dishpan or mini mamon molds, but remember to line them with banana leaves to ensure the batter doesn’t stick.

You will need:
  • 115 grams of rice flour
  • 100 grams granulated white sugar
  • pinch of salt
  • 150 ml coconut milk
  • 45 ml whole milk
  • 50 grams butter, softened
  • 2 eggs
  • 2 tsp baking powder
  • 50 grams macapuno (optional)
For the toppings
  • 2 salted eggs. If you don’t have just use regular hard-boiled eggs
  • grated cheese for topping
  • butter
  • grated coconut
Miscellaneous
  • banana leaves
  • round baking pan or Mamon molds
  • vegetable oil for greasing the molds
Procedure:
  1. Rinse banana leaves under warm water and trim away thick edges. Cut leaves that are large enough to cover the bottom and sides of your baking pan. Quickly pass and heat leaves over stove flames for a few seconds or until just softened. Place the leaves on your molds and brush with butter. Set aside.
  2. Preheat the oven (up and down heat) to 190 degrees Celcius.
  3. In a large mixing bowl, whisk butter and sugar. Add egg one at a time and whisk more until smooth and runny. Gently pour coconut milk and whole milk while stirring with a wire whisk. Whisk until well incorporated. Add baking powder and gradually add rice flour. Whisk until well combined. Add macapuno (if using). Transfer the batter to the molds or baking pan lined with banana leaves.
  4. Place in the oven and bake for 10 minutes. After 10 minutes, remove from the oven and place grated cheese and egg. Return to oven and set to broil function. Bake for another 10 minutes or until the top of bibingka is golden brown.
  5. Remove from the oven and brush the top with butter and sprinkle some grated coconut. Enjoy!
