You will need:
  • 800 g pork loin
  • 100 – 150 g brie cheese
  • 1 clove of garlic, minced
  • fresh basil, chopped
  • salt and pepper
  • food yarn
Procedure:
  1. Preheat the oven to 200 degrees Celcius.
  2. Cut the meat across, but not entirely through. The meat should be able to be folded out into large pieces.
  3. Cut approx. 5mm thick slices of brie cheese and fill the pork loin with layers of brie cheese.
  4. Put the chopped basil on the brie cheese and then garlic—season with salt and pepper.
  5. Place 4 to 5 pieces of trimmed cord under the pork loin and tie around the meat one piece at a time. Remember to tighten and squeeze the stuffing back if it falls out.
  6. Place the pork loin in an oven-proof dish and bake in the oven for 30 minutes.
  7. Let the pork loin rest for approx. 5 minutes.
  8. Serve with creamy potatoes.
