Pork meatballs in curry

Pork meatballs in curry is another ubiquitous and traditional dish in Denmark. This is a very mildly spiced dish, and many Danish children happily call this their favorite food.
In general, we eat a lot of pork here in Denmark. It is also one of our biggest export markets, and about 90 percent of Danish pork gets exported to other countries. No wonder some of our most popular dishes in Denmark include pork!

You will need:

For the meatballs

  • 500 grams of ground pork
  • ½ medium-sized onion, finely diced
  • 100 ml of milk
  • 1 egg
  • 2 tbsp plain flour
  • 1 tbsp breadcrumbs or oatmeal
  • water for boiling
  • salt and pepper, to taste
For the curry sauce
  • 50 grams of butter
  • 3 tbsp curry powder, adjust to how strong you want it
  • ½ – 1 medium-sized onion, finely diced
  • 1 apple, diced
  • 3 tbsp plain flour
  • 200 ml cooking cream; you can also use milk or coconut milk
  • 400 – 500 ml of boiling water from the meatballs or just cold tap water
  • 1 pc pork cube
  • raisins and desiccated coconut, optional
  • salt and pepper, to taste
Procedure:

For the meatballs

  1. In a bowl, mix all the ingredients (except water). Place in the fridge for 30 minutes.
  2. Add water, turn on the heat, and heat up until a boiling point in a large saucepan.
  3. Using a tablespoon and your hand palms, create small meatballs, and put them carefully into the boiling water.
  4. Boil the meatballs for about 10 minutes or once they rise to the top and transfer in a plate or a strainer. IMPORTANT! Save the water used to boil the meatballs; this will make the curry sauce. Don’t throw out all that great flavor!
For the curry sauce
  1. Melt butter in the same saucepan you used to boil the meatballs.
  2. Add onion and fry for 2 minutes until onions are translucent.
  3. Add curry and fry another 3 – 4 minutes until curry becomes fragrant.
  4. Sprinkle flour and stir to soak up all the liquid. Continue to stir until the mixture becomes tough and gluey.
  5. Add the boiling water a bit at a time and WHISK SMOOTH EACH TIME.
  6. Add cream and bring to a gentle boil until thickened. Stir often since this sauce can quickly burn to the bottom of the pot.
  7. Add pork broth cube, apple, raisins, desiccated coconut, and mix everything.
  8. Finally, add the meatballs to the sauce and let them heat up for about 3 – 5 minutes.
  9. Serve the meatball and curry sauce together with some boiled rice.
