Buns with cardamom
There are a thousand different recipes for buns, but this is easy to work with and quick to make, and the result is the most delicious, light, and airy buns. So, it’s a pure win-win!

These lovely light buns are perfect for breakfast, birthday parties with afternoon tea or a cup of coffee, or a mug of hot chocolate. They are super soft, airy, and delicious. This recipe here is straightforward to follow, and there are a few ingredients to go with – flour, milk, water, yeast, salt, sugar, and a little cardamon. It also does not take time to prove. These buns are also lightly spiced with cardamon. Cardamon is a spice used in a lot of European baking, particularly here in Scandinavia. While buns are still warm, slice them and smear them with butter, cheese, and jam. I also like buns with butter and salami topped with sliced red onions. Give it a try!

You will need:
- 150 ml milk warmed
- 150 ml water
- 25 g yeast fresh or 7 grams instant dry yeast
- 1 large egg, room temperature
- 8 g fine salt
- 50 g softened butter, room temperature
- 550 g bread flour
- 40 g granulated sugar
- 1 tsp ground cardamom, optional
- egg + water for brushing
- Pour water and milk together in a small saucepan and heat it until finger-warm. Add yeast and stir it into the liquid mixture.
- Add all the dry ingredients and mix to combine.
- Now add the yeast mixture and egg. Knead it on the kitchen mixer and mix on low speed for 2 – 3 minutes. You can also knead the dough by hand.
- Add the soft butter into the dough and knead for about 8 – 10 minutes or until the butter is absorbed and the dough is once again smooth and shiny.
- Place the dough in a lightly greased bowl and cover with a plastic wrap. Let it rest for 15 minutes.
- When the dough has risen, gently punch it to remove air. Put the dough on a lightly floured surface, divide it into 10 – 12 equal portions and shape each into a ball.
- Preheat the oven to 375 °F or 190 °C.
- Arrange the buns on a baking sheet lined with parchment paper, leaving some space between them because the dough will expand. Cover loosely with a clean towel, then set aside for 25 minutes.
- Brush the buns with a beaten egg with water to give them a lovely sheen.
- Bake buns on the middle rack for approximately 10 to 12 minutes. Remove the buns from the oven as soon as they seem, feel, and smell ready.
- Transfer the buns to a wire rack to cool.
